tainability. Many specialist coffee shops are not eco-
nomically profitable because the obsessive search for
excellent quality leads them to accepting a lot of wasted
coffee, energy and water. And this certainly does not
benefit the future of the industry because it gives few
prospects to baristas. The combination of the VA388

the issue of sustainability because they allow the barista
to significantly reduce waste and energy consump-
tion. In some coffee shops baristas using them could
increase the weekly average of double shots produced
