Moka pot game is
still strong
Italian market stays loyal to
their original creation, moka pot.
Moka was a low-pressure extrac-
tion machine, which made a stron-
ger espresso with a different fla-
vour profile and no crema. This

common trend of simplifying machines and making them more and more

education to understand how it works. One more good example is LatteArt-
ist by Thermoplan, a coffee machine that is able to do pour-over latte art and
definitely makes work easier for a barista. Moreover, Unic presented their
new machine, Stella. New Stella is much more digital and gives you a great
opportunity to manipulate pre-infusion and post-infusion so the coffee stays
juicy and brown for a long time.
Nuova Simonelli showed their new Aurelia Wave. The machine detects
basic water parameters and warns when quality changes. This way a barista
can be sure of water quality and can save in machine maintenance. Aurelia
has been designed to contain energy consumption and improve environmen-
tal impact. With its new Auto-purge system the cleansing of the sprayheads
happens automatically when unplugging the filter holder. Making coffee
might be hard, that is why this new machine allows you to collect all the data
of your coffee making: hourly, weekly and monthly. This way it is easy to
monitor and improve quality performance and consumption.Astoria pre-
sented new machine this time, Storm. This machine is as good outside as it
is inside: all brewing peculiarities are at the barista’s discretion, Storm allows
customizing each cup up to your needs. Capacitive 5’’ displays show graphs
with the extraction curves and brewing time, allowing to regulate brightness,
choose your own language and connect to the cloud server. The graphs
provide real time information about the parameters, which let a barista
evaluate the obtained brewing curve. New machine presented by La Mar-
zocco, Leva, is redeveloped and redesigned technically in order to spend less
physical strength while making coffee. The user can intervene in the pre-
infusion pressure, shot volume and extraction pressure on each group. Leva
also greatly improves temperature stability of the traditional lever machine
thanks to an innovative PID temperature control. Leva’s digital displays show
real time extraction pressure on the coffee puck, the pre-infusion and extrac-
tion time as well as b pressure curve of the shot. Put it simply, you can have
as many different pressures as you want thanks to the new regulation system,
because it was a 3 group machine so you can adjust the pressure differently
on each group. In addition, the machine has individual water boilers and
separated steam boiler.
