constantly exploring the boundaries in search of the perfect
brew. Melbourne’s coffee culture has spread worldwide,
prompting cafes as far afield as New York to name themselves
after Melbourne streets. The same trend can be seen locally,
with Malaysian cafes taking inspiration from Melbourne.
As one of the main pioneers of specialty coffee in
Melbourne, the St Ali family has grown from a flagship store
tucked in an assuming laneway in North Melbourne to one
of the most recognisable names in the Melbourne coffee
industry. Matt Perger has a string of impressive awards under
his belt, including champion at the 2012 World Brewer’s Cup
and second place at the 2013 World Barista Championship.
Over the course of 90 minutes, Matt educated the
audience through a journey on the origin of coffee and give
a quick crash course on the process of coffee from the tree
to the cup. Attendees learnt about the differences of roasting
profiles and how it affects the taste and enjoyment of a brew.
Geared towards the audience who were interested to delve
deeper into the world of coffee, Matt hopes that every
attendee leave with a finer appreciation of coffee through
his informative and interactive talks.
