Tea and water ratio: the nor-
mal ratio for brewing oolong tea is
1:14, however to those people who
don’t normally drink oolong tea,
it would be a little too strong. We
can start by adding 2 to 3 grams of
tea leaves, and change the ratio to
1:55. If the taste is mild, we can add
more leaves.
Brewing water: for the best
result, we need to use spring wa-
ter or bottle water, at least it has
to be soft.

Brewing for Gatherings with Friends and Loved Ones
Besides the cold brewing method that we talked about in the last issue, milk teas and fruit teas can also be a great
summer drink for parties and gatherings.
For small parties, we can use one pot for cream, and another pot for tea. If someone likes stronger taste, we can
brew the tea longer then filter out the leaves. Another way we can do this is to use stronger tea leaves like British black
tea. If one likes mild or floral taste, Jinxuan or Four Season Spring from Taiwan is a much better choice. To prepare milk
tea you will need to pour a thin layer of cream on the bottom of a cup first and then add hot tea to it.
To make a fruit tea, you will need to cut apples, oranges and strawberries etc. into small pieces. For the tea, you
can choose black tea or oolong tea,simmer the tea in a pot for some time. If you smell rich fruity aroma, pour the tea
into drinking cups. The sweetness of the tea comes from apples, you can use to make the drink healthier and without
adding any artificial sweeteners. If you don’t want the apple affecting the color of the drink by making it brownish, add
some lemon to prevent any color changes.
