hand, we need to put less if it is yellow bud Jinjunmei or Longan. Jinjunmei belongs to the single bud black
              tea, and it won’t affect the taste if the water temperature is low. If you want to know how to brew black
              tea, you can simply follow the same procedure as with the green tea.
                  There isn’t any strict rule about brewing white tea, Zhengshanxiaozhong and oolong tea. We can pour
              boiled water over the leaves, using the same three grams like we brew green tea. Some people question
              whether we can use boiled water on Baihao Silver Needles. The answer is yes. The white tea is utterly re-
              freshing, more importantly it can ease summer thirst.
              Kong Fu Tea for Breaks and Conversions



                  Some people think Kung fu tea is just a bev-
              erage, others consider Kung fu tea as a ritual. In
              the streets of Chaoshan, we can see people sur-
              rounding tables everywhere. There are usually a
              porcelain plate and three small cups with covers
              on the table. This traditional ritual can make you
              feel more relaxed: we wait, we clean, we pour and
              we drink; being patient is not a waste of time, but
              an art.
                  The main equipment for brewing Kung fu tea
              is a covered bowl or a small pot, at least one cup or
              more for sharing with friends and other tea lovers.
                  How to brew black, green and oolong tea (us-
              ing a covered bowl):
                  1. Boil the water, pour the boiled water into
              the covered bowl, next cover the bowl and turn it
              for 360 degrees to let it soak the entire container.
              Then dispose the water. This step helps raising the
              temperature of the bowl, to better helping release the aroma of the tea.
                  2. Next, we put some tea leaves into the bowl and pour water over it. Then, we pour the tea into the drink-
              ing cup. However, this time we don’t drink and we need to dispose it as well. This step helps improve lifting
              the temperature of the drinking cups.
                  3. Again, we pour boiled water into the covered bowl, cover the bowl. We can let it soak for 10 to 15 sec-
              onds. This time we can drink our tea.
                  4. After that, we can add more time to soaking, depending on the color of the tea.
                  The covered bowl is a very useful tool , not only it can be used to brew all kinds of tea, it is also easy to
              clean. However, amateurs can easily get burned when using the covered bowl. Here I have a little trick to help
              you out with the bowl: try to choose a bowl with an edge that folds outwards instead of inwards. Also when
              pouring tea, try to pour it vertically. If we are brewing oolong tea or black tea, we need to dispose the tea
              completely every time.





                                                For a tea pot:

                                                1. Use boiled water to warm the equipment as well, after that, pour the
                                                boiled water into the pot and cover it for 10 to 20 seconds.
                                                2. We can pour tea directly from the pot to our drinking cups.
                                                3. We don’t need to pour it all out. We can save the rest and add more
                                                water after. If the taste becomes mild, we can cover the pot for a little
                                                bit longer to make the tea stronger.
                                                4. This way, we can enjoy our tea and save a lot of time.
