 W  hether it’s because of the rise of ethical consumption, growth of

 health awareness, or the rising occurrences of lactose intolerance,
 interest in plant-based foods has been skyrocketing in the past
 few years, and there are consumer forces driving this market,
 creating the demand for dairy alternatives, including vegan ice cream. The glob-
 al vegan ice cream market was valued at $520.9 million in 2019, and it’s expect-
 ed to reach $805.3 million globally by 2027, according to Allied Market Research.
 Plant-based alternatives are on the rise, and many companies try to follow the
 trend—for ethics or for profit—but their missions, products, and experiences are
 far more different than you would expect. I spoke with 5 Russian ice cream
 manufacturers, operating on different scales and targeting different audiences,
 to take an in-depth look at the emerging market of vegan ice cream.
