                                                               began,” Thanin said.
                                                                   Nai Suan coffee menus weren’t an instant hit to the locals.
                                                               Since Thanin is from Bangkok, his coffee taste tends to be mild
                                                               and smooth which caters to Bangkok consumers. However,
                                                               a lot of his customers in Chiang rai often complain that his
                                                               coffees are bland. Thanin adjusted his coffee and the experience
                                                               taught him that consumer preference in different region is very
                                                               important. After settling in Chiang rai for a while, Thanin began
                                                               adding different variety of brewing technique and coffee beans
                                                               for his customers to try. “We primarily brew with the espresso
                                                               machine, but we also offer drip and French press. Besides brewing
                                                               methods, varieties of local and import coffee beans are available
                                                               for customers to choose.”
                                                                   Besides the story of Nai Suan, Thanin also gave an interest-
                                                               ing comment on Thailand coffee industry, “I met a lot of experts
                                                               who are trying their best to drive Thai coffee industry to the world
                                                               stage. I think the more indy café we have, the better the industry
                                                               and coffee quality will be.” Thanin also hopes that Thai coffee
                                                               beans will be internationally recognized just like Brazilian and
                                                               Kenyan coffee.
                                                                   “If you want to open a café, do some research to make sure
                                                               that it is what you really want to do. Not every café will be profitable.
                                                               Café has become a business to open when you don’t know what to
                                                               do, and that’s why a lot of them are now closed. Think thoroughly
                                                               before you spend your investment. Don’t open a café if you just want
                                                               to have a good looking shop or you don’t want a full-time office job.”
                                                               Nonetheless, passion won’t be enough to run a café, since you
                                                               will need to consider other factors like marketing and coffee
                                                               quality before opening a café.
