        Roasting Happiness

               Thailand is turning its attention towards quality coffee
        beans and trying out different roast profiles in order to bring
        out the potential in the beans. Some cafés go another step and
        roast their own coffee because they want to be able to control
        the quality and consistency of the roast. What if there’s a
        roaster who doesn’t own a café or a roaster, and doesn’t take
        roast order? Why would he be roasting? “Happiness” is a very
        short and straight forward answer from Khemtana Sangudkij
        (Khem) who calls himself a freelance roaster. What does that
        really mean? We are here to find out!

        Freelance Roaster
               While he off duty as an executive engineer for a
        property developer, Khem enjoys roasting coffee as a hobby.
        He regularly drinks coffee, anything from Arabica, robusta, to
        traditional and 3 in 1 coffees. Even though he’s now a roaster,
        he sometimes find himself drinking traditional and instant
        coffees. Khem’s life took a turn when he walked into Gallery
        Drip Coffee and tried a drip coffee. “At that time I considered
