                  As the sun sets and the moon rises, we are reminded of the cyclical nature of life. Day
              turns to night and back again, in an endless dance that has accompanied humanity since the
              beginning of time. This issue celebrates a timeless process that shapes our very existence.
              Without it there wouldn’t be coffee, nor tea or ice-cream. In fact, there wouldn’t be any of
              us. From the way we experience our days to the coffee we drink, every aspect of our lives is
              intertwined with the alternation of light and darkness, and as such we have integrated it into
              our cultures in unique and interesting ways. In this special issue, we explore the varied facets
              of light and dark, day and night, through the lenses of coffee, tea and ice cream. We put our
              thinking caps on and discuss what coffee and light have to do with the way our sleeping pat-
              terns evolve. We explore how in Argentina ice cream shops stay open until the small hours
              of the night and how tea tastes different as the day turns into night with the change of seasons,
              which can be experienced at Proper Tea located in Chengdu. Uncle Bean and Giapo Ice Cream
              show us how stepping from the unknown that darkness often represents to the safety of light
              can be an adventure that results in some of the most memorable experiences and creations
              of our lives. As new businesses and developments continue to break ground in Asia, the cof-
              fee industry shifts from day-time operation to an after hours experience that is surely deep-
              er, darker, and more sensual. A brew is no longer just for the mornings… We invite the others,
