S       ugar is one of the most important substances

                                          for human survival. Together with fat and
                                          protein,  they are seen  as  the  three major
                                          nutrients for our bodies. All the carbohy-
                                 drates except cellulose are the main source of body heat,
                                 providing about 60%-70% of total energy that humans
                                 need. Carbohydrate is a different name for sugar; it is
                                 an important most-often-seen and widely distributed
                                 organic compound. Sugars are found in various food like
                                 grains, cereals, tubers, beans, rice and flour products,
                                 vegetables and fruits etc..
                                     As for gelato, sugar is another important and nec-
                                 essary component, standing in the line with fat and skim
                                 solids. Usually people perceive sugar as a sweetener. In
                                 fact, in the total 35%-42% dry matter of gelato, sugar is
                                 the one that takes the biggest share: it does not only
                                 provide the sweet taste for gelato, but also plays a role
                                 as solid contents to improve the chewiness of gelato and
                                 lower the freezing point (the more sugar added or melt-
                                 ed in cream base, the longer it takes to freeze). Moreover,
                                 it has a function of increasing the viscosity and softness
                                 and control ice crystal’s growing.
