Mulled Wine and
Black Plum Sorbet
Ingredients Black Plum Jam
· Black plum 1.2kg
· Sugar 300g
Mulled Red Wine
Red Wine 750ml
· Orange 1 piece
· Lemon 1/4 piece
· Clove 3 pieces
· Cinnamon stick 1cm
Sorbet Base
· Fabbri MORBIFRUTTA Gelato Base 150g
· Water 2100ml
Instructions
① Black Plum Jam: Place plums in a pot, stir in
sugar and cook, over medium heat, stirring
occasionally, until plums fall apart, cook on
until it thickens and clings to a spoon.
② Mulled Wine: Cut the orange into slices,
squeeze lemon, put both into a pot, add red
wine, cloves and cinnamon, simmer for 5-8
minutes and filter.
③ Mix mulled wine and plum jam, together
with other ingredients with a hand electric
mixer, discarding any solids.
④ Pour the puree to Batch Freezer to harden.
